Sous Chef Job at UniSea
BASIC FUNCTION: Works under direction of the Executive Chef and closely with the Food and Beverage Manager. Facilitates business growth at the Harbor View Bar and Grill outlet. Supervises Harbor View grill kitchen personnel.
ESSENTIAL DUTIES:
- Maintain a safe working environment in accordance with company policy by closely monitoring the safe use of equipment and work habits in and around the work area. Responsible for staying abreast of current company policies as they relate to safety.
- Ensure a consistent level of quality, portion and plate presentation. Adhere to specified menu standards, while also exhibiting a high level of modern, creative culinary skills.
- Supervises, trains, and schedules employees under his/her direct supervision.
- In charge of kitchen area at The Grand Aleutian Hotel, Chart Room restaurant. Is responsible for seeing that all service runs smoothly between the Front and Back of the house.
- Maintain food inventories and assist Executive Chef in ordering products as needed to ensure sufficient supply of all menu items.
- Rotate and organize all food items for menu and to promote cost efficiencies.
- Responsible for menu development and weekly specials
- Consults with Executive Chef on labor and staffing problems.
- Supervise, train, and counsel employees according to UniSea policies and procedures.
- Develop and implement kitchen cleaning schedules.
SECONDARY DUTIES:
- Perform other duties as needed.
POSITION SPECIFICATIONS:
- High school diploma and degree from ACF Apprenticeship Program or and Accredited Culinary School.
- Minimum 5 years in the culinary field: two years in Fine Dining, preferred.
- 2 years of supervisory experience.
- Good communication and organizational skills.
